The Path
Since 1991, Weingut Paul Achs in Gols, Austria has been the site of Paul Achs’s work, and the estate’s identity has come to read through the place itself: the low-lying terrain, the lake influence, the village around it. His own way of naming the place stays plain: “My name is Paul Achs. I come from Gols. Gols is a village of about 4,000 inhabitants on the eastern shore of Lake Neusiedl.”
The Work Today
Biodynamic certification in 2006 marked a defined shift in the farming and cellar work at the winery. In Burgenland, Achs describes conditions with agricultural directness: “We are based in Burgenland, we have perfect conditions for viticulture.” The point is not flourish but confidence in a site that can carry the work. Red wine remains the main line at the estate, while white wine is still given full attention. Achs puts it plainly: “We produce mainly red wines, but the white wines do not get neglected either.” That balance gives the winery its shape, with reds at the center and whites handled with the same seriousness.
