i. Biography
Her interest in wine took shape in Buenos Aires while she was studying Literature, outside the usual family-vineyard script. That combination of city, study, and cellar work set the terms for Paz Levinson’s career: wine approached as something to be read, judged, and communicated, not just served.
Coming Up
Wine work often asks for both calibration and language. Paz Levinson trained at Centro Argentino de Vinos y Espirituosas (CAVE) and earned a BA in literature, and those two tracks gave her a useful range: technical discipline on one side, and a practiced ear for description on the other. In Buenos Aires, that range found early application at Restó, where she served as head sommelier from 2003–2008. The room demanded timing, precision, and pace; recommendations had to land cleanly, and service had to stay measured without drawing attention to itself. From there, her responsibilities widened into a larger field of cellar and dining-room judgment, culminating in her rise to chief executive sommelier / executive chef sommelier of Group Pic in 2013.
Where They Are Now
Paz Levinson is chief executive sommelier — also described as executive chef sommelier — at Group Pic in France, a role built on selection, memory, and reading service as it happens. At that level, the work is not only about choosing bottles; it is about understanding how a cellar functions as a record of place and time, and how a table receives that record. Levinson put it plainly: “The cellar is the place where the liquid memory of a place is kept.” The line fits a professional whose practice sits between technical control and interpretation, where wine is handled as structure, history, and expression at once.
In Their Words “I realized that wine had the same complexity and depth I was seeking in literature. And more than that—it could be shared.” “The cellar is the place where the liquid memory of a place is kept.”
Honors
Paz Levinson’s honors map a steady climb through high-pressure competition and peer recognition. She placed Fourth in the ASI Best Sommelier of the World competition in 2016, confirming her place on the international stage. In 2015, she was named ASI & APAS Best Sommelier of Americas, a title that marked her as a leading figure in the region. In 2010, she was awarded Best Sommelier of Argentina, the foundation on which those later results were built.
