Pei Liu

Pei Liu is a Taiwanese mixologist, founder, and creative director of unDer lab, an avant-garde cocktail venue established in Taipei in 2022. With a background in chemical engineering and an early practice curating pop-up cocktail bars in art galleries, she introduced a signature style blending culinary techniques, savoury flavor profiles, and Taiwanese tea into structured tasting menus. Under her leadership, unDer lab earned recognition on Asia's 50 Best Bars extended list and received multiple Tatler Dining awards.
