i. Biography
Per Thøstesen is the chef, restaurateur, and owner/director of Bistro Boheme in Copenhagen. Per is the driving force behind the operation. Bistro Boheme’s own history notes that he trained under Paul Bocuse in France, spent three years in those trials, later returned to Denmark, and eventually returned to French gastronomy at Bistro Boheme.
