Perry Hendrix is a Chicago-based chef whose career moved from wine into kitchens after graduating from Miami University in Ohio with a degree in botany. He served as executive chef at Custom House in Chicago, later became chef de cuisine at Avec, and by 2020 was appointed executive chef at Pacific Standard Time in Chicago; more recent hospitality Perry Hendrix is culinary director at Hogsalt and a long-time Avec veteran.
