The Climb
Peter Eaton’s route then moved through five years under Raymond Blanc and on to The Vineyard at Stockcross under John Campbell, a sequence of kitchens that points to apprenticeship by absorption. The lesson in that kind of path is not just how to plate or season, but how service holds together, how a brigade moves, and how consistency becomes part of the job. By the time he took the Executive Chef role at The Woodspeen in Newbury, United Kingdom, in 2014, the progression had already been built. At that stage, the work was less about learning the framework and more about carrying it forward in a senior post. Today, Peter is Head Chef of The White Hart, and the thread remains the same: polished training, measured advancement, and positions earned in named kitchens rather than announced from outside them.
Today
Since 2014, Eaton has led the kitchen at the Newbury restaurant from its opening, and that continuity matters in a trade where a kitchen’s identity is shaped service by service. He describes the work in terms of refinement rather than reset: “I've developed the food style and the concept, keeping it consistent.” That kind of language points to a chef focused on holding a line across the menu, with flavours, textures and presentation treated as connected parts of the same brief. “My aim at The Woodspeen is to look at flavours, textures and presentation and keeping all of them consistent throughout the journey of the meal.” At The White Hart in Fyfield, Oxfordshire, the brief stays rooted in the same practical concerns: service, guest experience and a steady, bespoke offer. Eaton’s stated aim is not excess, but control delivered cleanly. “Our aim is to create memories for a great hospitality, a bespoke approach and consistent offer.”
Signature
Peter's signature dishes include chargrilled beef fillet, beef cheek fritter, and smoked cheese agnolotti and red wine sauce. Together, they hint at a kitchen that balances richness with precision, and comfort with considered technique.
In Their Words “My aim at The Woodspeen is to look at flavours, textures and presentation and keeping all of them consistent throughout the journey of the meal.” “Our aim is to create memories for a great hospitality, a bespoke approach and consistent offer.”
Recognition
An Acorn winner, Eaton’s recognition sits in the same register as the rest of his career: earned through sustained work rather than noise.
