Peter Hagen-Wiest is an Austrian two-Michelin-starred chef who has served as the Head Chef of ammolite - The Lighthouse Restaurant at Europa-Park Resort in Rust, Germany, since 2012. He developed his classical foundation and international style through formative positions at three-Michelin-starred Schwarzwaldstube in Baiersbronn, Vila Joya in Portugal, and Cheval Blanc in Basel. Under his culinary leadership, ammolite was awarded one Michelin star and two Michelin stars, maintaining the distinction continuously.
