Peter Perabo

Since 2007, Peter Perabo has worked the cellars at Bischöfliches Weingut Rüdesheim GmbH in Rüdesheim am Rhein as Operations Manager and cellar master, a post that asks for discipline in the cellar and judgment in the house. The work is built around Pinot Noir and Riesling, handled with the kind of economy that comes from repeated practice rather than display. “We focus on the essentials: Riesling and Pinot Noir. With a lot of craftsmanship and little technology,” Perabo says. That line sets out the method plainly: concentration over excess, and daily precision over noise. Quality, in this framework, is not a slogan but the standard that organizes the cellar. Perabo describes the aim directly: “Our priority is the production of the very best quality.” The phrase is spare because the work itself has to carry the weight. His former role as managing director from 2021–2025 extends that same logic of continuity, adding responsibility without changing the central measure: control, consistency, and attention to detail.
