i. Biography
Pierre Résimont is the chef and co-owner of the two-Michelin-starred restaurant L'Eau Vive in Profondeville, Belgium. After graduating from the École Hôtelière Provinciale de Namur, he opened L'Eau Vive in 1990 with his wife Anne, earning his first Michelin star and a second Michelin star in 2012. A leading figure in Walloon gastronomy, he is a co-founder of the Génération W culinary collective and a member of Les Grandes Tables du Monde.
