i. Biography
Hipolito “Polo” Cano is the Assistant Winemaker at Pedroncelli Winery in Sonoma County, where he was appointed in early 2022 after more than two decades as Cellar Master. Pedroncelli states that his wine-industry work began in 1988 in the vineyard, followed by apprenticeship in the cellar, and that he now oversees winemaking from harvest through bottling.
