Early kitchen work shaped the range of Poul Andrias Ziska’s craft. He moved from a kitchen at a pizzeria to work under Leif Sørensen at Leif Sørensen in Faroe Islands, then spent a brief period at Geranium in Copenhagen. Those first rooms, from informal service to more exacting dining, set the route that later brought him back to the Faroe Islands and into the role that has defined his career since 2014.

Where They Are Now

For Poul Andrias Ziska, the kitchen is a tool for drawing out the value of local product rather than adding noise to it. “We are able to serve gastronomic meals because we can focus on the ingredients that we find around us.” In that view, abundance comes from attention: looking closely, cooking carefully, and letting local ingredients speak plainly. “It is great that I can cook for my guests and show them that we have something unique and something that we can be proud of.” The line places hospitality as presentation as much as service, with Faroese distinctiveness brought to the table without strain.
