Training at Beaune gave Quentin Joussier a disciplined handle on precision and a clear respect for terroir. Those are the traits that carry through to Domaine de l'Évêché, where, since 2018, Quentin has worked as associé and viticulteur. The role sits inside the estate’s daily decisions, where soil, balance, and the long view of viticulture set the pace.
Where They Are Now
At the domaine, the current direction is measured in steps, not sudden turns. “We are in HVE production; that was one of the goals of my installation,” Quentin says, and the wording matters: the estate’s change has been planned as a gradual shift, not a break from what came before. The same practical line runs through the farming. “We are close to organic, but we keep our freedom to intervene,” he says, describing a system that borrows from organic methods without locking itself into dogma. In the vines, that shows up in the move away from chemical weed control and toward mechanical work on the soils, a more hands-on way of managing the vineyard through the season. That restraint also shapes the Clos de l'Évêché cuvée, where the team works below the yield limits of the Côte Chalonnaise appellation and the Bourgogne appellation. The choice points to concentration over volume and to a refusal to push the site beyond what it can naturally give. “For our flagship product, the Clos de l'Évêché cuvée, we go below the yield limits of the Côte Chalonnaise appellation and the Bourgogne appellation,” Quentin says. The broader method is one of combining approaches without losing control of the work. “We have a way of doing things that combines different approaches, with mechanical work on our soils, after abandoning chemical weed control.” In practice, that means each intervention stays tied to the vineyard’s condition, with the aim of keeping the expression of place exact rather than forced.
