i. Biography
Quentin Pellestor-Veyrier, born in 1993 in Narbonne, France, began his career as an apprentice under Franck Putelat in Carcassonne before spending nearly four years at L'Auberge du Vieux Puits with Gilles Goujon in Fontjoncouse. He served as chef at L'Alter-Native in Béziers from its opening in May 2021, earning a Michelin star after eight months and the Gault&Millau Grand de Demain Occitanie award in 2022. In February 2025, he opened his own restaurant, Maison Pellestor Veyrier, in Colomiers near Toulouse, focusing on Occitan terroir cuisine.
