i. Biography
Quentin Pellestor-Veyrier, born in Narbonne, France, began his career as an apprentice under Franck Putelat in Carcassonne before spending nearly four years at L'Auberge du Vieux Puits with Gilles Goujon in Fontjoncouse. In February 2025, he opened his own restaurant, Maison Pellestor Veyrier, in Colomiers near Toulouse, focusing on Occitan terroir cuisine.
