Raül Balam is a Catalan chef and co-manager of Moments, restaurant at Mandarin Oriental Barcelona on Passeig de Gràcia, working alongside his mother, the chef Carme Ruscalleda. Born in Sant Pol de Mar, he specializes in creative reinterpretations of high-end Mediterranean and Catalan cuisine, emphasizing seasonal, local produce, technique, and emotion.
