Raül Balam

Raül Balam is a Catalan chef and co-manager of Moments, the Michelin-starred restaurant at Mandarin Oriental Barcelona on Passeig de Gràcia, working alongside his mother, the chef Carme Ruscalleda. Born in Sant Pol de Mar, he specializes in creative reinterpretations of high-end Mediterranean and Catalan cuisine, emphasizing seasonal, local produce, technique, and emotion. Moments, under their leadership, holds one or two Michelin stars and is for neo-traditional dishes reflecting Catalan heritage.
