i. Biography
René Mathieu is a Belgian chef known for pioneering plant-based cuisine in Luxembourg, especially at La Distillerie in Bourglinster Castle and later at Fields by René Mathieu at Findel Airport. In January 2025, he moved his team from La Distillerie to launch Fields at the Airfield Hotel near Luxembourg’s Findel Airport, continuing a 100% vegetal cooking style. He has spent two decades at La Distillerie before opening Fields, and the restaurant is presented by the Michelin Guide as seasonal and vegetarian.
