Richie Lin has made MUME in Taipei the clearest expression of his approach to cooking: technique first, product handled with discipline, and place treated as a working frame rather than a slogan. Since 2014, as Head Chef, chef and owner, Lin has guided the restaurant with that same exactness, and the result has been recognized with the Asia's 50 Best Restaurants Flor de Caña Sustainable Restaurant Award in 2022. One of MUME’s popular dishes, Taiwanese eel with a pancake of mixed, wild and dried spices, shows the method plainly: local specificity, structured construction, and no extra noise.

Formal training at Le Cordon Bleu Australia gave Lin a base built on rigor, and that foundation reads through the rest of his work. He then worked under Executive Chef Peter Gilmore at Quay in Sydney, a formative period that remains central to his own account of his career.
