In the early part of Robert Song’s career, sushi work and restaurant management moved side by side. One side demanded knife work, timing, and control at the pass; the other required the slower discipline of keeping service, staff, and dining room in order. That combination sharpened the habits that later defined his work: attention to detail, operational steadiness, and an understanding that the meal depends on the room as much as on the plate. Since 2009, Song has served as founder and Chief Executive Officer of Maru Hospitality Group, a role built on daily repetition as much as title.

Today

The craft standard in Song’s work is direct: good ingredients handled with care, and food prepared in a way that deserves to be shared. With sushi, the emphasis is on intention rather than assembly, and on the respect owed both to the ingredient and to the guest receiving it. That approach puts consistency and connection on the same level. The work begins well before service, in the handling of rice, fish, and final presentation, and continues through the kind of kitchen culture that treats pride as part of the discipline. “It’s a craft,” Song says, and the point is plain: hospitality should leave a human mark in the smallest details.
