i. Biography
Rocco DiSpirito’s formation runs through formal training and early repetition in service kitchens. The Culinary Institute of America and Boston University gave him the base; New York kitchens gave him the pace. Italian-American cooking and healthy cooking are the two poles that define his work, with heritage on one side and a lighter register on the other. By age twenty, Rocco DiSpirito was already working in the kitchens of legendary chefs around the globe, building the habits that would carry him from line work to public-facing roles.
