Cooking is the throughline in Ryan Costanza’s work: a practical ethic shaped in his family’s restaurant and carried into the discipline of high-pressure kitchens in American and Chinese dining. The Climb
The family restaurant gave Ryan Costanza an early working education in repetition, pace, and the daily habits that make a kitchen hold together. After that, David Bouley in New York City, New York, USA, placed him in a more exacting environment, where precision and attention to detail were part of the job. Those years set up the next step: Executive Chef at Freedman's in Los Angeles, California, USA (from 2020), a position that shifted the work from execution to direction, with responsibility for both standards and tempo. Since 2023, Costanza has also been co-owner of Present Tense, while since 2024 he has served as Executive Chef of Dayang (Wenming Road).
