In Ryan Hacker’s hands, the work is about layering, contrast, and keeping land and sea in steady conversation.
The Path
Training at Texas Tech University and New England Culinary Institute gave Ryan Hacker the formal base, but the early rhythm of the line came from his internship at Hamersley’s Bistro in Boston. That first service work, with its repetition and pace, set the cadence for what followed. From 2009, Hacker worked as a line cook at Abacus in Dallas, then moved to Osteria Il Sogno in San Antonio as a cook. Those years widened the range of his cooking and tightened the consistency that fine dining asks of a kitchen. In 2014, Hacker joined Brennan’s in New Orleans as executive sous chef, a role he held through 2019. That run placed him inside a dining room where precision and continuity carry equal weight with invention.
The Work Today
The cooking favors a measured hand: familiar ingredients set with enough restraint that each one can be read, but with enough richness to hold the plate together. Blackened Redfish was presented with crab, parsnip écrase, young chicories, and smoked garlic. The dish moves between crisp edges and softer ground, tying the fish to earthier textures and giving the plate a darker aromatic line. The vegetable work carries its own weight. Confit Parisienne Sweet Potatoes came with duck fat, almond-chile crunch, cane syrup, and micro hearts on fire, joining sweetness, fat, chile, and garnish in a single composition. It is the kind of plate that turns produce into a complete statement, with each element answering the next. Sweet Tea Brined Chicken Wings were served with Crystal Gastrique and Blue Cheese Dressing, with a Louisiana hot sauce name folded into the structure of the dish rather than treated as an aside.
