i. Biography
Ryo Sato is the chef behind La Trace in Nara, where the restaurant opened in 2016 and built its identity around French cuisine rooted in local Nara ingredients and producer relationships. A 2025 feature states that he completed culinary school in Tokyo in 1997, worked in French restaurants in Tokyo, spent time refining his craft in Burgundy in 2004, served as sous-chef at FEU in Tokyo in 2006, became chef at Quand l’appetit va tout va! in 2012, and then opened La Trace in Nara in 2016.
