Carrot, cheese, and the trace back
A whole carrot is stuffed with Camembert before it reaches the pass at LA TRACE in Nara. Ryo Sato opened it in 2016 with a French name meaning the trace, or footprints. The idea is not decorative. The kitchen follows ingredients back to Nara producers, then brings those origins into a tasting menu shaped by French method rather than by local nostalgia. Yamato vegetables, chicken, pork, and seasonal produce form the working vocabulary. Bakuku pork may be sauteed, baked, and rested more than once so the fat renders cleanly. A lamb fillet can arrive with spring onion. Grilled fish carries its sauce with restraint.
