i. Biography
Sam Clover is the head chef at The Peacock Inn in Chelsworth, Suffolk, where the restaurant’s menus are built around local, seasonal, and sustainable produce. Sam began working in kitchens at age 14, trained at catering college in Colchester, and later worked in restaurants including Pied à Terre under Herbert Berger before developing a style centered on traditional techniques and fermentation.
