Sebastian Jiménez

Sebastián Jiménez is a Mexican chef and the Head Chef at Ræst in Tórshavn, Faroe Islands. Originating from Atlixco in Puebla, Mexico, he worked across multiple continents and spent four years on the culinary team at the two-Michelin-starred KOKS before taking over Ræst's kitchen in 2023. At Ræst, he has received international acclaim for blending traditional Faroese dry-air fermentation methods with Mexican flavors, earning honors such as The Best Chef NextGen Award.
