Formation
Precision in the vineyard can come from outside the usual agricultural route. With civil engineer training behind him, Sébastien Caillat entered wine through structure, measurement and the habit of making decisions from observed conditions. At Domaine Lamy-Pillot in Chassagne-Montrachet, the work as an employee placed that training inside a Burgundian frame: cellar discipline, timing, and close attention to what changes slowly. Chassagne-Montrachet rewards exact reading of place, season and cellar rhythm. In that setting, Caillat's engineering formation became useful not as theory, but as a working method: watch closely, intervene with purpose, and keep the construction of the wine coherent. as co-creator and producer of Domaine Lamy-Caillat, he has applied that method to a small, concentrated body of work defined by restraint rather than scale.
The Work Today
Vineyard work at Domaine Lamy-Caillat is based on repeated seasonal contact with the plots. Sébastien and Florence Caillat follow the vines through the year, returning often enough to adjust work to what the season gives. The practice is close to nature because it is close to the rows: observation, timing and incremental decisions rather than preset formula. Cellar work continues the same register. Vinification is natural and traditional, with artisanal winemaking and long élevage. The wines spend two winters on the lees before hand bottling after natural clarification; since the 2013 vintage, they can spend as long as 28 months on their lees. Bottling is done by hand directly from the barrel without filtration, after a two-year élevage in cold, damp cellars. In this system, time carries much of the work normally assigned to handling. The domaine's range is narrow by design. Domaine Lamy-Caillat produces only white wines from Chardonnay in Chassagne-Montrachet, across four climats: three premiers crus and one village wine. The wines are described as modern, slightly struck-match reductive, textured, concentrated, ripe-fruited and finely acidic, with no bâtonnage. The frame is tight, but the style holds several pressures at once: concentration with acidity, ripe fruit with reduction, texture without bâtonnage. The cellar philosophy is stated plainly by Caillat: "We were looking to take much more time, and to do something in a different style – my father-in-law always used to say that 'we do nothing' in the cuverie, but it took me a while to work out what he actually meant. In practical terms, "doing nothing" is not absence of work. It is the discipline of waiting, reading, and leaving the wine enough time on its lees to clarify and take shape without filtration.
