The Work Today

At Colet Vins, the craft is sparkling wine, with Classic Penedès sparkling wines at the center of the house style. Sergi Colet frames that work in blunt terms: “Humans do not have the right to modify nature.” The point is not restraint for its own sake, but a refusal to force the fruit away from what the vineyard and vintage already offer.
