Since 2022, Shaun Scrooby has been owner and chef of VUUR Restaurant in Stellenbosch, South Africa, a room built on small scale and a clear brief. The cooking is kept to essentials. In his own words: “We were content with getting guests to come and join us, have a good time and enjoy some good food and wine.” That approach gives the restaurant its quiet confidence: fire, aroma and company are allowed to carry the experience without excess around them.

Before the kitchen, the field was the training ground. Early in his career, Shaun Scrooby worked as a safari guide at Safari industry in South Africa, a role that sharpened the habits that later matter in open-flame cooking: observation, patience, attention to movement, and reading a changing landscape.
