The Climb
Shotaro Kamio’s career has moved by accretion rather than leap, with each post adding another layer to the same working vocabulary. The years at Yoshi's, held until 2013, established the base of that language. That span now extends to Pabú as well. The result is a line of work defined by range, but also by consistency: the ability to carry the same standards across different kitchens without losing pace.
Today
A chef managing multiple rooms at once has to keep timing, identity, and execution in balance. The cooking points toward clarity with edge: grounded, measured, and willing to introduce a sharper note when the plate calls for it.
Signature
Kamio’s dishes work through contrast, using texture and seasoning to keep the plate in motion. Beet-cured trout pairs the earth of beet with the clean line of trout. Bacon mochi with house teriyaki sets chew against savor and gloss. Cod roe spaghetti with squid, ginger and jidori egg brings salinity, tenderness, heat, and richness into one bowl. Taken together, the signatures point to a kitchen that values precision without flattening the food’s own character.
Recognition
The recognition on record is operational: the move from Yoshi's to Iyasare in 2013, the addition of Zut Tavern in 2015, and the current reach of Pabú alongside those posts. In trade terms, that kind of sustained responsibility signals trust earned over time.
