Simon Rogan is the chef-owner of L'Enclume in Cartmel and founder of the independently owned UMBEL Restaurant Group. He opened L'Enclume in 2002 and developed its farm-to-table model around homegrown, seasonal produce, later expanding the approach across restaurants in the United Kingdom, Malta, Hong Kong and Thailand.
