Stéphane Carrade

Stéphane Carrade is the chef of Le Skiff Club at Hôtel Haaïtza in Pyla-sur-Mer, where he earned the first Michelin star and the second, making it the only two-star restaurant on the Bassin d'Arcachon. Originating from the Hautes-Pyrénées and trained at the Lycée hôtelier de Talence, he developed his 'terroir progressif' philosophy after influences from London, Réunion during military service, and stints with Michelin-starred chefs like Jean Bardet in Tours. In 2023, he became president of the Exp'Hôtel salon in Bordeaux.
