Stéphane Dubois is the Executive Head Chef of L'Auberge des Montagnes in Pailherols, Cantal, France. Having trained at the Lycée Sacré-Cœur in Saint-Chély-d'Apcher and worked alongside chefs such as Régis Marcon and Pierre Gagnaire, he previously. At L'Auberge des Montagnes, Dubois focuses on refined, seasonal interpretations of traditional Auvergne mountain gastronomy.
