The Path
Pastry apprenticeship in Northern France, pastry courses in Vincennes, Paris, and a teaching post at CFA of St. Maximin in St. Maximin, from 1994–2001, are the kind of sequence that builds a Pastry Chef with range: repetition at the bench, technical study in the classroom, then the discipline of explaining the work to others. In that span, Stéphane Tréand moved from fundamentals to instruction, and the craft expanded from production into method. Resort pastry asks for scale without loosening standards, and Tréand’s years in California sit squarely in that register. He served as Pastry Chef at St. Regis Monarch Beach Resort in Dana Point, California until 2012, and from 2005 he also became Executive Pastry Chef at The Four Seasons Hotel & Resort in Newport Beach, California. Both roles placed him in operations where consistency, timing, and finish have to hold across service. Leadership later spread across teaching, production, and consulting. Since 2012, Tréand has been founder of The Pastry School; since 2014, founder of ST Patisserie; since 2015, founder of ST Chocolat; and he also serves as Executive Chef Consultant of Occitanial and pastry arts coach of Pastry Team USA. The thread through those titles is not volume for its own sake, but the transfer of standards from one team, one class, and one kitchen to the next.
The Work Today
At Occitanial in Tokyo, Japan, the work still runs on structure: school, shop, and production moving in parallel. Tréand says it plainly: “I’m in charge of the school, where I teach classes every week, and Chihiro is in charge of the production for the shop, which we open twice a week.” The setup reads like a working division of labor, with instruction and output kept in balance. His current practice sits between making and teaching, with standards maintained through repetition rather than display. That is the useful part of the job for another artisan: building systems, holding line, and keeping technique legible enough that others can carry it forward.
Signature
Stéphane's signature dishes include Constructing a Chocolate Showpiece, Showstoppers, Violin, Couples, and Bouquet. The names point to work where structure is part of the brief: pieces that have to stand, read cleanly, and carry visual order as well as flavor. In pastry terms, that means control of form, finish, and assembly.
