Chef-owner at The Trattoria in St. James since 2013, Stephen Gallagher’s career has the feel of a long, steady ascent: practical, hard-earned, and shaped as much by the rhythm of kitchen labor as by formal training. Before he was guiding a restaurant of his own on Long Island, he was starting at the very bottom, washing dishes in a bakery—an early apprenticeship in the realities of restaurant life, where the work is relentless and the lessons arrive quickly. From there, he pursued culinary arts at New York Technical Institute, adding structure to instinct and turning a natural aptitude into a profession.
