The Path
Classical training at Culinary Institute of America, Hyde Park campus gave Stuart Brioza a technical baseline before the pace of professional kitchens took over. Under Chef John Hogan at Savarin restaurant in Chicago, that baseline was pressed into practice, with attention to detail and command of technique becoming part of the job rather than an abstraction. By 2004, San Francisco became the next testing ground. That stretch set up the ideas that would later come into clearer form in his own rooms. Today, Stuart is chef-owner of State Bird Provisions (since 2012) and chef-owner of The Progress (since 2014).
