Early Years

Midsummer House in Cambridge, England, was one of the rooms where Stephen Lancaster worked in the kitchen, placing his apprenticeship inside a brigade structure where craft is sharpened by close attention and long hours. Cross-border kitchen work adds more than a line to a CV when the rooms have distinct culinary identities. Oaxen Krog in Stockholm, Sweden, was another kitchen where Lancaster worked, extending his development beyond Cambridge and into a different professional setting. The cooking avoids weight as a substitute for depth. It relies instead on accumulation, precision, timing, and a controlled reading of flavour. Modern technique is used to update classic recipes, with a light touch and precise plating. Fermentation provides depth, seasonality sets the timing, classical method supplies the structure, and plating keeps the work exact. Each component has a defined role. The present role gathers the earlier geography into one working language. Cambridge and Stockholm provided kitchen experience; Four Seasons Hotel Tokyo at Marunouchi is part of Lancaster’s Tokyo career; Singapore added the 2022 opening of Poise. SÉZANNE is the current arrival point: a Tokyo role defined by technique, Japanese provenance and restraint.
