i. Biography
A school of viticulture gave Sylvain Potin his first formal grounding, but it was at CLAU DE NELL in Ambillou-Château, in the Loire Valley of France, that his work began to take on its fuller shape. There, fieldwork and cellar decisions were not separate tasks but two sides of the same quiet discipline, each one answering to the other, each one anchored in the pace of the vineyard. In 2008, he arrived as biodynamic viticulturist and winemaker; the following year, he added estate manager duties, bringing the life of the vines and the life of the house into closer, more exacting alignment.
The Path
Sylvain Potin trained at School of viticulture, a foundation that helped establish the precision and attentiveness that have marked his career ever since. That early training led him toward a way of working shaped by close observation, patience, and an evident respect for what the land can give when it is listened to carefully rather than pushed. Today, Sylvain is Biodynamic Viticulturalist and winemaker of CLAU DE NELL (since 2008) and winemaker & proprietor and co-propriétaire of Domaine CLAU DE NELL. He works at CLAU DE NELL in Ambillou-Château as a biodynamic viticulturist and winemaker, and his approach remains firmly rooted in biodynamic viticulture. Natural fermentations and whole-cluster bunches in some or all fermentations are part of that working vocabulary, techniques that keep the emphasis on texture, tension, and the character already present in the fruit. The wines are described as expressing terroir faithfully, a quality that feels in keeping with a method that keeps the vineyard at the center of every decision. At CLAU DE NELL, the cellar does not seek to overshadow the site; instead, it appears to act as a clear conduit, allowing the nuances of the place to remain legible in the glass.

Falstaff’s winery entries list 2016 Anjou AOC Cuvée Violette, while the estate identified CLAU DE NELL - Chenin Blanc 2016 as the first vintage for that 100% Chenin cuvée. The 5e cuvée Blanc de Noir followed as a 2021 release.
