    i. Biography

    Takao Fujiyama is a Kyoto-born Japanese chef who trained in Japanese cuisine from age 18 and spent about two decades with Wakuden, ultimately serving as executive chef across its branches, including Kodaiji Wakuden in Kyoto. He became independent in 2018 and opened Ginza Fujiyama in Tokyo in March 2019; the restaurant earned a Michelin star in the Michelin Guide Tokyo 2020. He is also associated with a Hong Kong pop-up at Shikigiku and appears in coverage describing him as the chef behind Ginza Fujiyama and a successor to Kyoto kaiseki traditions.
