i. Biography
Tavel Bristol-Joseph is an Austin-based pastry chef, partner, and restaurateur associated with Emmer & Rye, Hestia, Canje, and Nicosi. He moved from Guyana to the United States at age 17, studied at the New York Restaurant School, and moved to Austin in 2015 to open Emmer & Rye with Kevin Fink; he later helped open Hestia, which was named #1 Best New Restaurant in America by Robb Report. He has also been recognized nationally as one of Food & Wine’s Best New Chefs of 2020 and as a co-recipient of Esquire’s pastry chef honor for work at Nicosi.
