Tetsuo Azuma is the chef-owner of acá / Aca 1° (acá 1°) in Tokyo, a Spanish omakase restaurant relocated from Kyoto to Nihonbashi in 2020. The restaurant’s official site describes his cuisine as rooted in traditional Spanish cooking while incorporating his own ideas, and third-party listings identify him as the chef at the Tokyo location. Prior to the Tokyo move, he opened aca in Kyoto in 2013 and the restaurant earned a Michelin star in Kyoto before relocating.
