i. Biography
He built bars around quality spirits, classic recipes, a nod to the tropics, and single-origin, grower-produced spirits. In Bar Agricole in San Francisco and Trou Normand in San Francisco, Thad Vogler gave that approach a clear shape: polished, but not precious; rooted in classic bar craft, but open to wider references.
The Path
The opening of Heaven's Dog in San Francisco marked the first recorded step in a run of projects defined by considered rooms and careful pours. That early work set a pattern Vogler would return to: bar programs built with intention, not noise. Bar Agricole in San Francisco (2010–2024) became the clearest expression of that method, and the long span of the project let the concept harden into something identifiable. In 2015, co-founding Trou Normand in San Francisco extended the same line of work into another address, keeping the focus on spirit-driven hospitality and the discipline of a well-edited bar.
The Work Today
Quality spirits and classic recipes sit at the center of the style, with the tropics used as a measured reference rather than a gimmick. That gives the work a familiar frame with enough lift to keep it moving. Single-origin and grower-produced spirits sharpen the point: the emphasis is on provenance, consistency, and the small distinctions that matter in the glass.
