Formation
French kitchen formation is cumulative: station work, repetition, timing, sauce work, seasoning, and the restraint to remove what does not serve the plate. In Thibaut Ruggeri’s early work alongside Michel Guérard at Les Prés d’Eugénie, the craft was set against a house associated with precision, balance, and the disciplined relation between generosity and lightness.
