Thomas Boullault’s career is built on the slow accumulation of kitchen work: apprenticeship, station work, then the pressure of Paris houses. At Auberge à la Tête de Lard in Sologne, he began as an apprentice and learned the first routines that shape professional discipline. As a cook at Auberge de Lanthenay in Sologne, he kept building the technical base that would carry into larger rooms. George V in Paris and Royal Monceau in Paris then put Thomas Boullault into the exacting pace of the capital, where consistency, timing, and precision are part of the daily standard. That progression led to L'Arôme Paris, where Thomas Boullault has served as head chef and owner/chef since 2007. The role marks a shift from training inside other kitchens to defining one of his own, with the same rigor carried forward into a house under his name.
