The Climb
The rigour of Jamie Oliver’s Fifteen trainee programme gave Tim Siadatan an early framework for disciplined service and kitchen standards. That first training ground set the terms for what followed: exacting work, clear expectations, and a habit of cooking within structure rather than around it. St John then tightened that discipline further when Siadatan joined as a commis chef. The kitchen demanded precision and restraint, and those conditions shaped a chef whose work would continue to value control, clarity, and economy of gesture. Trullo now carries that line forward through the role of chef director, with Siadatan’s name attached to a kitchen built from the same principles that marked his early years. The path runs from trainee to commis to director without breaking from its original training in standards, technique, and persistence.
Today
Fresh pasta sits at the centre of Siadatan’s present work, where Italian influence meets the habits formed in London kitchens. The medium rewards repetition, touch, and patience, and it is there that his cooking reads most clearly. Pappardelle with beef shin ragu remains the clearest marker of that approach at Trullo in north London. The eight-hour preparation points to a kitchen prepared to give time to a dish and let depth build gradually.
