Tim Siebert is a co-owner of Citrus & Cane, a tropical cocktail bar in Victoria, British Columbia, where he and Jessa Gildersleeve converted the former Copper Owl nightclub into a sit-down lounge. Citrus & Cane as a retro-1970s-inspired lounge known for rum-forward tiki cocktails.
