Coming Up
Training at Le Cordon Bleu school put technique ahead of personality, and Timothy Breton’s path through Parisian pastry kept that emphasis in place. At Plaza Athénée in Paris and later Café de l'Homme in Paris, he worked as baker and pastry chef before becoming head pastry chef at Bo&Mie in Paris (2018–2024). The throughline is precision: pastry that reads clearly, then opens up through texture, contrast, and controlled detail. Since 2024, Breton has been chef of Boulangerie Gonflé. The move places the same discipline in a more direct setting, where the work can speak with less mediation. The approach remains restrained and exacting, built around familiar forms shaped to carry more nuance than they first show.

Recognition begins with structure. Breton’s current work keeps ingredients legible while giving them a sharper outline, so each element serves contrast, flavor, or finish rather than decoration.
