The Climb
Bar work in a college-town setting teaches speed, consistency, and how to read a room without drama. Tobin Shea started there, behind the stick at a local bar near a college campus in Pennsylvania, where the work was hands-on and the pace left little room for error. That early floor experience set the terms for what followed: broader responsibility, more moving parts, and a clearer view of how a beverage program shapes the room around it. Program building, not just drink making, became the through line. Shea moved into the role of Beverage Director at Redbird in Los Angeles, taking on the orchestration of a bar program as part of the restaurant’s larger service structure. From there, his work expanded across Southern California in formats that asked for different kinds of precision. He helped open The Garage and El Cid in Silver Lake, Los Angeles, where the task included building bar identity from the ground up. He later assisted with the cocktail program at P&D Concepts in Orange County, California, and worked on a draft and bottled cocktail program at Circa restaurant / Soigné Group in Manhattan Beach, California, bringing order and polish to a format that had to stay easy in service. Today, Shea is Bar Director of Redbird and Vibiana, a position that keeps him inside a larger hospitality operation while leaving him close to the day-to-day mechanics of the bar.
