Tomás Gormley is an Edinburgh-based chef and restaurateur who leads Cardinal, an intimate fine-dining restaurant on Eyre Place, and retains Skua in Stockbridge. He was previously a co-founder of Heron in Leith, which earned a Michelin star in 2023.
