i. Biography
Tomohiro Uchiyama is the master brewer (toji) at Shimizu Seizaburo Shoten in Suzuka City, Mie Prefecture, where he leads the sake-making behind the ZAKU brand. The brewery says he is a native of Suzuka, studied biochemistry at a technical college in Nagoya, and began his career in sake production before developing ZAKU into an sake line recognized in competitions in Japan and abroad. He was also the brewer behind the toast sake for the 2016 Ise-Shima Summit.
