The work here is about reading the site closely and letting the wine come forward with restraint, rather than forcing a style onto it. Year after year, Carbó has kept the line of the estate clear: measured, site-led, and tied to the character of the place. Before Celler La Salada, Mas Candí was built by Toni Carbó with his best friend and business partner Ramón Jané. It is part of the foundation that carried into the later work in El Pla del Penedès.

At Celler La Salada, Toni Carbó’s role as winemaker is about more than title; it is about translating a specific landscape into wine with clarity and restraint. In El Pla del Penedès, within the wider Penedès region, the work sits in a setting where the vines and the land are central to how the wines are understood. The fact of Carbó’s presence since 2012 gives the estate continuity. Toni's signature wines include Xarel.lo 'La Bufarella', Roig Boig Tinto, and Roig Boig Metode Ancestral. Each name points to a different register within Carbó’s work at Celler La Salada: the brightness and structure of Xarel.lo 'La Bufarella', the deeper register of Roig Boig Tinto, and the lively, threaded energy of Roig Boig Metode Ancestral. Together, they show a winemaker working with consistency and a clear sense of place.
