The Trajectory
Contemporary cocktail practice in London moved closer to lab-method drink development in the late 1990s and early 2000s, with bartending, research, and bar ownership beginning to share the same bench. Tony Conigliaro entered that working context in 1999 as a bartender at Isola in Knightsbridge, London, then formalized the research side of the work in 2005 by founding The Drink Factory. The same line of practice carries through 69 Colebrooke Row, where bar ownership and product development sit inside a drink program built around controlled experiment, service, and sensory design. “This is basic kit for us.” Tony has said.
The Work Today
Science-based cocktail work depends on more than a novel serve; the concept, service, sound, and drink design have to be developed as one system. At The Drink Factory, Tony Conigliaro continues to work in that integrated register, treating the cocktail as a designed object rather than a recipe alone.
